About Lavenders
All are part of the Lamiaceae family. This family includes plants one of the characteristics of which is the shape of their flowers which have 2 lips (The Lamiaceae were previously called the Lamiaceae).
Lavender is a shrub that bears flowers grouped in fragrant spikes. However, there is not just one species of lavender but several, offering more or less fragrance and showing different characteristics. On the other hand, they are Mediterranean plants that most often grow in calcareous and stony, arid, and sunny soils.
These very aromatic plants are particularly appreciated for their fragrance and their many properties and are therefore widely cultivated. Lavender growers have 2 “favorites”, which are true lavender, or fine lavender, and lavandin. The essential oil extracted from it is secreted by glandular hairs found on the calyx of flowers and the underside of leaves.
The difference between lavender and lavandin, however, leads to distinct uses, one is more than appreciated in perfumery, and the other will be rather reserved for the industry.
